Nicolas Jacob, one of Jura’s most promising talents, is joining us for this month instalment of our Taste & Talk series.
A region’s native, the young vigneron counts amongst his mentors Laurent Macle of Domain Macle and Jean-François Ganevat. Working alongside these local legends offered Nicolas the opportunity to perfect his skills, while finding his own voice as a grower and winemaker.
Today Nicolas in based Cesancey, in the region’s South, and farms more than five hectares of vineyards in the surrounding area. The vines are tended according to the principles of organic and biodynamic farming. In the cellar, the focus is on natural fermentations, long élevages and a host of micro-cuvées reflecting each terroir’s variation.
Join us to taste some exceptional wines alongside snacks from the kitchen, while Nicolas shares with us the practices and philosophies driving his work.
Starting from this summer our opening times are changing. From Tuesday 1st August onwards, our restaurant will be open for dinner from Tuesday to Saturday, and for lunch on Saturday as usual.
Our last day open before the holidays is Saturday 5th August. We will be back as usual from Tuesday 15th August.
