François Rousset Martin spent his childhood between Burgundy, where he grew up, and the Jura, where his family owned a plot of vines, and he always had a thing for wine. But it wasn’t until later on, in 2007, that he decided to launch his own winery in the tiny village of Nevy-sur-Seille, not far from Château Chalon, the home of vin jaune.
Through his wines, François is driven by a desire to showcase all the subtle variations of these terrroirs. In order to achieve the goal, he prefers to top up the barrels, rather than following the local “rule” of letting the wines age in contact with oxygen. This translates into an incredibly wide range of cuvées, each unique and originating from a specific plot.
Join us for an intimate dinner hosted by our founder Jonathan and François Rousset-Martin, and enjoy a comprehensive selection of wines from such a brilliant winemaker, alongside a special menu by our chef Seb Myers.
