Emmanuel Lassaigne has been running the family vineyards since the late '90s. Located near the village of Montgueux, in the Aube region, Domaine Jacques Lassaigne thrilling wines are today some of the most sought-after amongst lovers of Grower Champagnes.
Chalky soils, and healthy, south-facing vineyards create the perfect conditions for Chardonnay to thrive here, lending these wines their signature minerality and depth. Always striving for excellence, Lassaigne vinifies each parcel individually, while relying on indigenous yeasts for fermentations and keeping interventions in the cellar to the minimum. Each bottle is disgorged by hand.
Here we have a unique opportunity to taste Emmanuel's experiment in ageing the same wine for different lengths of time before disgorgement, before bottling it in three separate stages: Soprano, Alto and Ténor.

Starting from this summer our opening times are changing. From Tuesday 1st August onwards, our restaurant will be open for dinner from Tuesday to Saturday, and for lunch on Saturday as usual.
Our last day open before the holidays is Saturday 5th August. We will be back as usual from Tuesday 15th August.
