Chef and author Analiese Gregory’s energy seems boundless. Hailing from New Zealand, and after years spent cooking in some of the world’s most prestigious kitchens, in 2017 Analiese traded her life in the city of Sydney for the wilderness of Tasmania.
Looking to live more sustainably and in greater connection with the natural world, Analiese has documented her adventures with fishing, hunting and foraging in Tasmania in a beautiful memoir filled recipes and stories.
Last July, for our monthly collaboration, we invited Analiese to cook at Planque alongside the talented chef Kobi Ruzicka, owner of Dier Makr and Lucinda Wine Bar in Hobart.

Starting from this summer our opening times are changing. From Tuesday 1st August onwards, our restaurant will be open for dinner from Tuesday to Saturday, and for lunch on Saturday as usual.
Our last day open before the holidays is Saturday 5th August. We will be back as usual from Tuesday 15th August.
