Last November, for our guest collaboration series, we invited to join us at Planque the team of Parcelles, bistrot à vin in the Marais, Paris.

After the event, we talked about wine with sommelier and co-founder Bastien Fidelin.

1. You're handed a wine list, what do you do?

Directly go the the Champagne section. See how we can start the meal with great bubbles

2. How do you know the wine you're drinking is good?

Everything is in order, all harmony and emotion, balance!

3. What is something fascinating you’ve been told over lunch?

Everything except political and Olympics de Marseille.

4. In whose company do you most enjoy drinking wine?

With people I love. Doesn’t matter if they know a lot about wine, just love drinking great bottles with great people

5. Can you describe your ideal combination of wine, music, and setting?

Few options. A glass of Champagne on a sunset in my parents Home in Cotentin, Normandy. A bottle of Nebbiolo with Sarah at home with old African jazz. A bottle of Allemand in Tokyo with old Japanese Soul. A bottle of bad red wine with great food with my grand parents in Saint Malo with bad Christmas music.

6. What sort of food would you add to the equation?

Sea food, raw fish and pizza! Always!

7. What is the most memorable bottle of wine you’ve drank?

8. Where did you drink it?

With friends, Tours, Paris, Le Perche, Lyon

9. Is there a characteristic you look for in a wine and in a friend?

Sincerity and purity.

10. What is your approach to drinking?

Not to get drunk, but to remember the moment I spent all my life

11. Do you apply this approach in other aspects of life?

Of course! Every thing I do and enjoy.

12. What shall we open next?

Bottles I wish to drink in my life:

Cornas Marcel Juge and Noel Verset at the same time

Really old Selosse

Old Rene Engel and Pousse d’or

And few other rare bottles. But maybe a cold beer now!

New Opening Times

Starting from this summer our opening times are changing. From Tuesday 1st August onwards, our restaurant will be open for dinner from Tuesday to Saturday, and for lunch on Saturday as usual.

Summer Break

Our last day open before the holidays is Saturday 5th August. We will be back as usual from Tuesday 15th August.
