Based out of a home bakery in South-East London, Cem Altinsoy is creating some of the most sought-after holiday panettone under the moniker of Kouttone.
The panettone ‘Caramel + Hazelnut’ is a new creation of his for Christmas 2021.
Cem says "The inspiration I guess is ‘What is most comforting and indulgent for the festivities that is Christmas?’ Both chocolate and dark caramel came to my mind. After numerous test batches, I decided to blend a rich dark caramel with Valrhona Caramelia, and use this as the main inclusion. And what better accompaniment to caramel than roasted hazelnuts? Caramelised roasted hazelnuts to be exact. The beauty being that as the panettone bakes, the caramel enveloping the hazelnut melts and ‘dissolves’ into the dough, adding more caramel notes. It is all a laborious process, from cooking the caramel, caramelising the hazelnuts, and that’s not including the three-day process that is the panettone dough itself. But I believe it is worth the effort."

Starting from this summer our opening times are changing. From Tuesday 1st August onwards, our restaurant will be open for dinner from Tuesday to Saturday, and for lunch on Saturday as usual.
Our last day open before the holidays is Saturday 5th August. We will be back as usual from Tuesday 15th August.
